Home-cooked Muffins

  1. 1 1/3 cup flour
  2. 1/2 cup sugar
  3. 1/2 cup non-fat plain yoghurt
  4. 3 tbsp butter
  5. 2 egg whites
  6. 1 tbsp poppy seed
  7. 1/2 tsp baking soda
  8. 4 tbsp orange juice concentrate (unsweetened)

Preheat oven to 200°C. In a mixing bowl beat all ingredients at low speed until moistened (about 1 minute). Spoon batter into greased muffin tin. Bake for 17-22 minutes or until lightly browned. Makes 12 muffins.
